After selling out in record time, we've gone in for round two of our collaboration 'drinking' Vermouth. Best from the fridge over ice. We have tweaked the botanical mix based on customer feedback and seasonality:

Wormwood, Rhubarb, Green Coffee, Pine, Epping Acorns, Colchester Oyster Shell, Green Olive, Marjoram, Bay, Lemon thyme, Samphire, Lovage, Bronze Fennel, Sweet Lemon, Bergamot.

Neat (cold) - "Champagne and Oysters V2 is low in sugar but the macerations give a full-bodied, soft mouthfeel, even neat. The nose of V2 is all pine and olives. We opted for brined green olives this time and their scent is salivating. Under the initial aroma comes the fennel and celery-like lovage and the citrus! A new addition to V2 is citrus peel, beautiful sweet lemon, and bergamot. We have lowered the bitterness a touch from V1 but green coffee and wormwood are still leading the fore-pallet but these botanicals play so well with the salinity from the oyster shells, olive, and samphire. V2 is still a 'sipping vermouth'. For me, this is for quaffing on ice alongside some nibbles, salted and smoked almonds, anchovies, and of course oysters! However, I feel this version is robust enough for mixing. I can see myself mixing a Gibson with this. I hope you enjoy. Take Victory"
