The next in our Pilot Hop series, this time we have blended a bold cut of Victory Cold Distilled Gin with Rakau hops and an infusion of Stone Pine needles.
We cold-distill, Rakau hops with characteristic aromas of Apricot, Passionfruit, Pine under vacuum. Capturing the hops true nature. We blend this distilate with a high abv cut of Victory Cold Distilled Gin and add to this a infusion of Max's favourite pine tree (the same one used for our Vermouth Pilot, in fact). Leaving the pine as an infusion, as aposed to a distilate, leaves a fuller mouthfeel and a delightful citrus element. It also imparts a slight green hue.
We have agonised over the balance of this gin and settled on a final abv of 50.3%.
